This variety of cocoa, with an exceptionally intense cocoa taste and complex aromas, is extremely sought after. You'll find Ecuador has strong cocoa flavours with plenty of sweet, caramelly notes and subtle fruity hints. Need some inspiration? Ecuador tastes great in pairings with mildly acidic ingredients, lightly roasted ingredients such as mild coffees, and subtly herbaceous ingredients.
