Callebaut's Sao Thomé Single-Origin Dark Chocolate has a very intense and complex taste: round and gentle cocoa and with plenty of fruity notes like dates and fresh plums. With its standard fluidity, Sao Thomé can be used in a wide range of applications, including moulding, enrobing, ganaches, and flavouring pastry crèmes and mousses. For pairings, our chefs recommend combining it with fruits that have moderate to high acidity and sweetness or slightly bitter ingredients such as walnuts or mild coffees and spices.

Certifications & Sustainability
Cocoa Horizons
Cocoa Horizons supports sustainable cocoa farming and enables the traceability of the beans. By empowering participating farmer cooperatives, Cocoa Horizons supports the cultivation of the finest ingredients, both today and in the future.
Sustainable cocoa
For chefs and artisans, it matters more than ever to know the stories behind the ingredients they work with, their origin, and how they’ve been grown. All to understand true quality. We share that concern greatly.
Traceability
Cocoa beans can be traced back to the farming communities in Ghana, Ivory Coast and Ecuador we directly buy from. With this traceability guarantee, we want to be transparent about the communities who grow our beans.
