Heat the double cream. Add the ruby chocolate and salt.
Pour the hot cream over the ruby chocolate. Stir until fully combined and perfectly smooth.
Fill the centre with raspberry coulis. Sprinkle with chocolate curls.
Dust with icing sugar to finish and enjoy Ruby chocolate chouxnut.
