Callebaut's Sao Thomé Single-Origin Dark Chocolate has a very intense and complex taste: round and gentle cocoa and with plenty of fruity notes like dates and fresh plums.With its standard fluidity, Sao Thomé can be used in a wide range of applications, including moulding, enrobing, ganaches, and flavouring pastry crèmes and mousses. For pairings, our chefs recommend combining it with fruits that have moderate to high acidity and sweetness or slightly bitter ingredients such as walnuts or mild coffees and spices.
